Ingredients

For the base of the pie

  • wheat flour (highest grade) - 250-260 g;
  • butter (fat content 72.5%) - 130 g;
  • sour cream (fat content 20%) - 3 tbsp. l.;
  • salt - 0.5 tsp;
  • baking soda - 0.5 tsp

For onion cheese filling

  • onions (medium size) - 2 pcs.;
  • processed cheese - 2 pcs. (200 g);
  • chicken eggs - 3 pcs.;
  • sunflower oil - 2 tbsp. l.

For decoration

  • dill - 30 g;
  • parsley - 30 g.

Cooking steps

Step #1. Start this cheese pie recipe by preparing the necessary ingredients. Put the processed cheeses in the refrigerator an hour before the start of the cooking process to make it easier to handle. But butter, on the contrary, should be slightly softened. If you strictly follow the recipe, then the onion pie with curds will turn out tender and tasty.

At the first stage of preparation, you need to knead the base. To do this, take a large and deep bowl. Sift wheat flour into it through a sieve. Add the softened butter to the flour and rub gently with your hands until crumbly. Add sour cream, salt and soda to a bowl.

Step #2. Mix all ingredients well. Knead the dough with rhythmic hand movements, which will become the basis for the pie. Then roll a ball out of it, wrap it with a special cling film or a plastic bag and put it in the refrigerator for a while.

Step #3. Peel the onion, wash it thoroughly under running water and pat dry with a kitchen towel. Then cut each onion into half rings. Heat a frying pan over medium heat, pour sunflower oil into it. Then put the onion half rings in the pan, fry them until golden brown. When you get the desired result, remove the pan from the heat and set aside, because the onion should cool.

Step number 4. Take the melted cheeses out of the refrigerator. Grate them carefully on a medium-sized grater. Onion pie will turn out delicious if you take full-fat cheese for cooking.

Step number 5. Crack fresh chicken eggs into a deep bowl. Then beat them until foamy with a fork or a special whisk. The egg mass must be homogeneous. This will make the filling of the cheese pie very tender and airy.

Step number 6. Put the grated processed cheese into a bowl with the egg mass. Send the fried onion half rings there. Mix everything well. As you can see, the filling recipe is quite simple, so you can do it very quickly.

Step number 7. It's time to take the dough out of the fridge. Roll out the base with a rolling pin to the size of your baking dish. Just be careful not to make the dough too thin. Grease the bottom and sides of a baking dish well with butter, and then dust them lightly with flour. Put the dough into the form, form high sides with your hands.

To prepare a pie with onions and melted cheese, take the necessary products. They should be at room temperature by the time you start making the pie.

Sift flour into a bowl, add butter, salt.

It is necessary to grind the ingredients with your hands until crumbs are obtained (the crumb is not small, but in small pieces).

Then add sour cream and soda.

Knead a soft dough, transfer to a bag and place in the refrigerator for about 2 hours.

While the dough is chilling, prepare the filling. Cut the peeled onion into half rings.

In vegetable oil over low heat, bring the onion to softness, add salt and black pepper to taste.

Grate the processed cheeses into a bowl on a coarse grater (if the cheeses are very soft, you can hold them in the freezer for a while).

Put the dough into the form, forming the sides. I use a 28 cm ceramic mold.

In a bowl, beat the eggs with a pinch of salt using a fork.

Pour the beaten eggs into the bowl with the cooled curds and onions.

Stir the ingredients. The filling is ready!

Put the filling in the form with the dough, level the top with a spoon.

Roll out the remaining dough, poke holes with a fork, cover the mold with the dough and filling.

Gently press the dough against the edge of the mold to remove excess dough (you can make several shortbread cookies from it).

Bake the onion pie with melted cheese in an oven preheated to 170 degrees for about 25 minutes.

Step 2: prepare cheese.



Remove the processed cheese from the package and chop with a grater with medium holes.

Step 3: prepare the bow.



Peel the onion from the husk and cut into small cubes. Heat up a frying pan with vegetable oil. Fry the onion pieces until pale golden and pour into a deep plate. Wait until the onion has cooled to room temperature before continuing cooking.

Step 4: prepare the filling.



When the pieces of fried onion have cooled, pour grated processed cheeses on them, and also break two chicken eggs into the mixture. Carefully split the third and separate the yolk from the protein, add the latter to the filling, and pour the rest into a separate bowl and set aside for now. Mix together all the ingredients for the filling, adding seasonings to taste.

Step 5: form a snack cake.



Remove the dough from the refrigerator and mentally divide into three parts. Pinch off about two-thirds and roll into a layer suitable in volume and size for the shape you have chosen. Place the dough on a baking sheet and pour the filling onto it, smoothing it with a spatula or a tablespoon. Roll out the remaining dough with a rolling pin and place on top, slightly wrapping the edges. With the remaining egg yolk, brush the top and edges of the pie, but don't get carried away and don't miss anything so that you don't get prominent black or pale spots. Important: roll out the dough on a floured countertop, the rolling pin and hands should also be sprinkled with flour.

Step 6: Bake the snack cake.



Preheat the oven to 200 degrees Celsius and put the formed cake into it. This dish needs to be baked for 30 minutes. The finished snack cake will be covered with a golden crust. Take it out after the specified time and leave to cool to room temperature, and then proceed to serve it.

Salt - to taste

Pour the flour into a large deep bowl. We take out the butter or margarine from the freezer and, periodically rolling in flour, rub it on a coarse grater. Salt, then grind the butter with flour with your hands into a homogeneous crumb.

We make a recess in the flour, pour in sour cream and soda, slaked with vinegar. We mix.

With your hands, simply collect the dough into a ball, but do not knead. Wrap in cling film and refrigerate for at least 2 hours, preferably overnight.


Cut the onion into thin half rings and pour into a heated frying pan with vegetable oil. Simmer over low heat until soft.

Beat eggs with salt with a fork (0.25-0.5 tsp).

Add chopped frozen, dry or fresh herbs there.

When the onion becomes soft, salt it (0.5-1 tsp) and pepper. We cook for another 3-5 minutes.

Mix hot onion with cheese, grated on a coarse grater. Taste and adjust to taste if needed.

Then we combine the cooled cheese-onion mixture with eggs. Onion filling for the pie is ready.

We take the dough out of the refrigerator, visually divide it into 3 parts and cut off one piece. Roll out a large lump (2/3 of the dough) on a floured surface into a thin layer (0.3 mm). Lubricate the form with a diameter of 26.5 cm with oil, transfer the dough there and level it, forming the sides.

Pour the stuffing into the mold.

Roll out the remaining dough and cover the filling.

We fix the edges and remove the protruding parts of the dough.


We send the onion pie to the hot oven. We bake at a temperature of 160-170 degrees for 25-30 minutes (we check the readiness with a toothpick - it should be dry). 4-5 minutes before readiness, grease the onion pie with cheese with a beaten egg.

Take the shortbread pie out of the oven and leave to cool.
