Royal cheesecake - recipes with cottage cheese step by step with a photo. How to cook curd royal cheesecake

Do you have recipes that you really want to try out, but still can't? Here are the ones I have. One of them for a long time was the “Royal Cheesecake”. I have long wanted to cook this cottage cheese pie, the magical taste of which I heard and read more than once. And just recently, I finally did it! Already from the first piece it became clear that I was putting it off in vain - it is really unrealistically delicious. Loved the taste and the easy way to prepare. My family crushed it in an instant, saying that they did not do enough. So I recommend increasing the amount of ingredients at least one and a half times, or better, bake 2 servings at once.

You can cook a royal cheesecake even without culinary experience, everything is so simple. The most difficult thing is to wait for it to cool completely, because both the aroma and the appearance of the baked pie are very appetizing. I advise you to do everything in the evening, and serve in the morning.

Cooking Ingredients

Products for the royal cheesecake need the most common. It will take

For filling:

  • 500 g of cottage cheese;
  • 1 cup of sugar;
  • 4 eggs;
  • vanillin or vanilla sugar;
  • 1 tsp baking powder;
  • zest from half a lemon;

for the test:

  • 2.5 st. flour
  • 1 incomplete glass of sugar;
  • 1 tsp baking powder;
  • 0.5 tsp salt;
  • 150 g butter.

How to cook royal curd cheesecake

Let's make the filling first. In a deep and convenient container, combine all the ingredients. Cottage cheese is desirable to take homemade, fatty. Lemon zest should be grated on a fine grater.

Beat it all with a mixer or in a blender until the mass becomes homogeneous. The consistency is quite liquid - like dough for pancakes.

In another bowl, prepare the dough. In general, it is difficult to call it a test - it turns out a crumb. Mix dry ingredients. Flour can be sifted. If there is no baking powder, then ordinary soda (0.5 tsp) will do.

Now we take the butter out of the refrigerator and rub it on a coarse grater directly into a bowl with flour and sugar. Periodically, we dip a piece in a mixture of dry ingredients - this will prevent the grated oil from sticking together in one lump.

Hands quickly grind everything into crumbs.

We cover the form with parchment or baking paper, grease a little butter. We spread the larger half of the sand crumbs into a mold, level it and make small sides around the perimeter.

Pour the curd filling and carefully sprinkle it with the remaining dough on top.

We send this beauty to bake in an oven heated to 200 degrees. There the cheesecake will be exactly 45 minutes.

Well, now let's move on to the most difficult part. We take out this delicate fragrant miracle and leave it in the cold for 6 hours. In the only baked cheesecake, the filling will be watery - do not be afraid, after cooling it will thicken.

It is better to serve the Royal Cheesecake with a cup of green tea, and I like to brew aromatic tea with mint and lemon. You can even cook for the holiday table. I hope the pie will become one of your favorite cottage cheese baking recipes.

Baking always comes in handy. When guests or the hostess forgot to buy treats for tea on the threshold, you can cook a cottage cheese bun with special taste qualities. Even the most sophisticated gourmet will like the royal cheesecake, and the ease of preparation will suit an inexperienced hostess. Let's look at the most delicious and easy-to-implement recipes.

  1. If you do not know how a royal cheesecake differs from a regular one, we will answer. Test! In this case, it is necessary to use shortbread, not yeast. There is nothing unusual in its preparation. Cut the butter into cubes, sprinkle with flour. Rub with your hands into a homogeneous crumb. Work so that the butter does not melt from the heat of your hands.
  2. For the curd filling, it is necessary to use, respectively, cottage cheese, egg, granulated sugar. To make the filling homogeneous, beat the listed ingredients with a mixer or whisk. For airiness, the proteins are whipped separately, and then mixed with the yolks, cottage cheese and sugar.
  3. The cheesecake is royally decorated with streusel - this is a baked confectionery sweet crumb. The baking process itself is carried out at 195-200 degrees, the oven must be preheated in advance. Before sending the dough into the mold, grease the container with oil or use a detachable cell (it is easier to remove the cake without damaging it).
  4. As for the duration of the heat treatment, it usually does not exceed 40 minutes. Let the dough turn brown. After cooking is complete, do not remove the cheesecake immediately, cool it for an hour to room temperature, covering it with a towel. The meal is served chilled.

  • Premium wheat flour - 250 gr.
  • Butter / margarine - 150 gr.
  • Cottage cheese (any) - 400 gr.
  • Soda - ¼ tsp
  • Chicken egg - 3 pcs.
  • Lemon zest - half a lemon
  • Sugar - ½ tbsp.

Cooking process:

  1. Put the butter in the freezer in advance so that it is firm. When you start to prepare the cake, take it out of the freezer and chop immediately. Sift the flour into the butter, then form crumbs with your hands.
  2. Put about two parts of butter-flour crumbs on the bottom of the baking dish, then level it and make sides so that the filling from the cottage cheese does not flow out.
  3. For the filling, you need to knead the cottage cheese very well, breaking up lumps and grains. There you need to add sugar, soda, as well as chicken eggs. The mixture can be whipped with a blender or mixer. The density of the curd filling should be similar to thick sour cream.
  4. Take a lemon, rinse it under running water, remove the zest and grate it on the smallest grater. Add the lemon zest to the cottage cheese and mix the ingredients thoroughly.
  5. Put the cottage cheese filling with lemon zest in an even layer on the base of crumbs, further smooth the surface with a spatula or spoon and complete the construction with a layer of the remaining crumbs.
  6. In the oven, preheated to a temperature of about 170-180 degrees, place the mold with a cheesecake and leave the product for 40-45 minutes. Remove the ruddy dessert from the oven after the allotted time and let it cool before serving.

  3. Put cottage cheese in a separate container, add vanillin, soda, granulated sugar and grind until smooth. You can add other additives: cocoa, cinnamon, apples, or something else. Beat the eggs into the cottage cheese mixture, and then, using a mixer or blender, beat the cottage cheese into a creamy paste without lumps and grains.
  4. Spread the curd mass over the layer of dough that you made in the multicooker bowl. After all the filling is in the bowl, sprinkle the rest of the crumbs on the product and place the bowl with the pie blank in the device.
  5. Close the lid of the multicooker and turn on the “Baking” mode for 45 minutes. Do not open the lid until the multicooker notifies you that the dish is ready. Let the finished cheesecake cool right in the multicooker bowl, then cover it with a wide plate or dish and quickly turn it over. Cover the cheesecake with another plate and quickly turn it over again. The cheesecake is ready to use!

  2. Intensively grind the mass with palms until fine crumbs are obtained. We work quickly so that the butter does not have time to melt from the heat of the hands.
